We were always having little luncheons at work. Mainly when we had to have meetings about this or that and it was going to take a while to go over things. When people are eating, you can pretty much guarantee that they aren’t talking, so it seemed to work out best to do these things around lunch time. Then, we knew everyone was going to be paying attention. They were almost always potluck style meetings, just because we didn’t have it in the budget to do it any other way.
I was already working and raising a family at home, I didn’t have a ton of time to make a homemade dish to take with me. I wanted a nice dip that I could make and stick in the fridge to take with me so that it was easy on me. It would have to be delicious too, because people are going to talk.
This no cook spinach artichoke dip from All Recipes was the answer to my dilemma. I tried it out on my family first, just to see how it would go over, and we ate the entire dish ourselves. I take it with me regularly now, and people are always looking for it when they grab their plates.
