When my Grandma used to make chicken casseroles for dinner, I was always the first one at the table. She made up the best pans in the world. I have never in my life been able to find anything that is even remotely close to the dishes that Grandma could prepare. At least until I found this recipe on Recipe Lion for chicken salad casserole. Now, I’ve had chicken salad, but casserole? I’ve never even heard of it. I absolutely had to try it. I don’t like to brag, but I was lucky enough to pick up some of Grandma’s talents when it comes to making casseroles and lots of other dishes.
I was impressed first of all with how nicely this went together. It was so simple, I think just about any level of cook could make it. Secondly, the flavor was so tasty! It was almost… almost as good as Grandma’s.
The family all inhaled this and there was nothing left in the pan to put away. That makes life simple for me. A fully belly and few dishes… that’s a good night in my book.
