My sister, somehow, learned very early on how to make some amazing desserts. Not only did she learn how to make them, she was actually very good at it. Whenever Mom would allow it, she would take her to the grocery store to pick up different ingredients for a any new recipe that she may have stumbled across. I didn’t even care that I got left behind. I knew what was going to be coming soon after their trip was over… A super tasty snack for all of us to share and enjoy.
She made a pineapple icebox cake that was like heaven in a pan. It was so light and airy…. perfect for the summer time, or for a nice winter warm up. It was a lot similar to this recipe from Recipe Lion actually.
Before I left home, I was sure to have her write down all her recipes so that I could make them for my new husband. This one was and still is one of his favorites. It’s one of my favorites to make too, it’s so easy and the final results are amazing.
