No matter how hard I try to keep life on track, it seems like at a minimum, we are running late at least a couple of times a week. I like to have my family sit down to a nice breakfast every morning, but of course that hardly ever happens. My husband and I both work and we have three kids to help get out the door in the morning. Sometimes its a waffle or pastry out of the toaster being the best that I can get out. When I have time, I will make homemade waffles so that those can be microwaved quickly when we’re in a hurry.
Whenever I find a different recipe that I can make ahead of time for breakfast foods, I try it out. That was what happened with this recipe from Grab Your Spork. I made them on a Saturday when we were just sitting around to see how they would turn out.
Well, I think I made 8 or 10 mini loaves, and they were gone by Sunday afternoon. So much for having something to grab and go with during the week! Not really, I made up another double batch. They are exactly what we are looking for in our busy schedule.
