The Lord blessed me with three wonderful boys. Now, it’s no secret that Moms that have three boys live a very, how do you say, exciting life? When they were smaller, there wasn’t a dull moment around my house. It seemed like someone was always covered in dirt from head to toe trying to run around the house. Another one would be hanging from something that about made my heart stop. The third would usually be sitting on my lap getting a band-aid and kisses for their latest daredevil stunt.
It was crazy at the time, but as I look back, I wouldn’t change it for the world. Now that they are older, I have all new adventures to live with them. One of the biggest ones is trying to feed three hungry boys, along with myself and my husband. It isn’t always the easiest thing to do I’ll just tell you that much right now.
Whenever I find a casserole as filling as this BBQ tater tot casserole from The Weary Chef, I am adding it to my menu rotation. The nice thing is, thankfully, my family isn’t picky. I can feed them just about anything I want and they’re scarfing it down. This was actually very tasty, so we got the both of best worlds in this dish. What a relief.
