One of my all-time favorite BBQ dishes is coleslaw. I never made it, just waited until someone else did. I figured that it was going to be too difficult for me to do. It always looked so fancy I just knew that it had to take a really long time to make. That was until I started looking in to different recipes. I found this one on Recipe Lion that said there was nothing to it, so I thought, for the next BBQ we had, I would give it a shot. We weren’t having many people over, so if it was a fail, no big deal.
It really did go together as easy as they made it sound. It was quite shocking to me. I wished that I had figured this out a long time ago. I feel like I have missed out on something. Whenever I craved coleslaw before, I would have to go to a restaurant to get it.
That isn’t the case anymore! Now, when I want a taste of creamy casserole, I can make up a batch of my own. It holds nicely in the fridge for quite a few days too, so if nobody else wants any, I have all kinds of leftovers. We never throw any away!
