We were having some friends from high school come back to our hometown for about a week or so to do some visiting. They were going to stay in a hotel, whew, but I knew they were going to be over quite a bit. We were excited about that for sure! We couldn’t wait to see them, but having someone stay with you for an entire week can be a bit pressing. I wanted to make sure that we at least fed them seeings as they were already spending a pretty penny on their room. I didn’t just want any ol’ meal either, I wanted some that looked like restaurant quality. After all, they had come a long way.
I found this recipe on The Pioneer Woman for a pasta with pesto sauce and instantly fell in love with just the look of it. It looked incredible. I went down to the ingredients list and instructions. I knew just by looking it was going to be something that I could easily make up.
This is what we had for their first dinner in town. I made a double batch because I wasn’t sure what kind of appetite they were going to have. It went over really nicely with everyone at the table. Even my somewhat choosey kids!
