My kids were home from school for their Spring Break. Now, I love my kids, as much as all moms do, but a week at home in the middle of the school year can get stressful! In the summer it doesn’t bother me at all. I know that they are just home and that’s it. In the Spring though, I feel myself counting down the days for them to go back and learn some more. The biggest pet peeve that I have is that they are complaining about being hungry every ten minutes. I know that they don’t get to eat that often while they are in class, so I’m not sure what the deal is with that.
Anyway, I wanted to make sure to give them some nice lunches while they were home so that I could hopefully curb some of that “hunger” for a little longer than ten minutes. I had picked up the ingredients for Mexican flatbread pizzas from a recipe that I saw on The Pioneer Woman.
These were awesome for two different reasons. First of all, they were really easy, so the kids could help me make them. They could top their own with whatever toppings they wanted. Second, they were delicious! I think I had three the first day! We made these twice over breaks, and a bunch since then!
