It was our kickoff to the summer block party. I look forward to it every year. We never really know when it’s going to happen. It just depends on when the weather breaks and we get a nice weekend. It brings all of the neighbors out of their houses anyways, so we might as well share a nice meal and some conversation. Last year, it really did pop up out of nowhere. We had no idea what was happening until we looked down the cul de sac and saw everyone pulling their grills and picnic tables out.
Great. I had nothing to make. Then I remembered that I had saved a recipe that I had seen on Spend with Pennies for just such occasions. It was a creamy cucumber and tomato salad that only needed a few ingredients. I pulled it out and thankfully I had all that I needed to toss it together.
It looked and smelled like summer! I took it outside and we were ready just in time to start passing the food around. This is a recipe that is going to go to a lot of summer BBQs and picnics this year. It was highly liked by everyone at the event.
