I don’t know about your kids, but my daughter LOVES ham. It’s the strangest thing to me, especially seeings as she’s only one year old, and my ten year old son is just now starting to eat meats. It was a very long time that he went without eating any sort of meat. Ham, chicken, turkey, didn’t matter… he didn’t like it. Now my daughter on the other hand, put meat in front of her, she’ll take that over a piece of candy… literally! So, whenever I can incorporate some meat into dinner without having to serve out big chunks of it, it’s worth a shot.
I know the little girl is going to like it, but the boy is a different story. So, when I saw this recipe on Spend with Pennies for a cheesy potato and ham casserole, it sounded perfect for our family. We all love potatoes… who doesn’t? And this would allow me to slowly introduce a little meat to the boy. Everyone at the table loved it!
It really wasn’t hard to put together either, and it was really cheap to get all the ingredients. I can see this one being served up at least once a month from here on out!
