My son came home from school a few weeks ago and said, “Oh yea, I have baseball practice at 5 today.” Um, okay? Thanks for the heads up! I wasn’t planning on heading out of the house in less than an hour. I thought we would have dinner at six like we usually did. Nope, not today. What was I going to do for dinner? I recalled a recipe that I had seen on Spend with Pennies for a homemade broccoli and rice casserole that didn’t take too long. I figured now is the time to try it out.
It went together really fast, thank goodness. Everyone at the table enjoyed it so that was a nice bonus. We are broccoli fans at our house already so I knew that wasn’t going to be a problem. The whole pan got cleaned out because we went back for seconds.
Next time I make this I think I will put meat in it to make it a little bit more filling, but other than that, this is going to be a recipe I use a whole bunch from here on out I’m guessing. Super simple and super affordable.
