When my kids were smaller, I had the hardest time getting them to eat any kind of vegetable. That’s when someone suggested to me that I try hiding them in some of their favorite foods. Now, how on Earth was I going to do that? I didn’t think it was possible, until I came across this recipe on The Recipe Rebel for a “healthier” one-pot spaghetti. Spinach, carrots, onions? Yeah, right. They are never going to fall for this. I took my chances though and made it anyway. I thought the flavor was amazing.
I already like vegetables though, so it didn’t matter as much what I thought compared to the kids. Surprisingly, they all really liked it too! I never told them that were all those good for you treats hidden in there, and they never knew the difference. I think my husband may have suspected something, but he didn’t say anything either.
Now, this is the only way I make my spaghetti anymore. At least I know that my family is getting one good meal in during the week. It’s not difficult to make either so I choose to toss it together quite a bit.
