Life Tastes Better With This Eggplant Parmesan Casserole!

 

When I was growing up, my childhood best friend was Italian. Her grandparents originally lived in Italy and came to America with their children, her parents. They embodied and embraced the Italian culture more than anyone I knew. I loved going over to their house for dinner. Everything was cooked so wonderfully. I mean the smell from their oven was outside of their door and was enough to make you salivate!

Everything was homemade. They did not believe in anything frozen. One time I was going over their home and they asked me if I wanted to stay for dinner. I, of course said yes. They told me that we were having eggplant parmesan casserole for dinner. I gave my friend’s parents a strange look and said that I had never eaten eggplant before. I thought her mom almost fell over!

She told me that I was in for a real treat and that eggplant was a very delicious dish and that it could make you feel just as full as chicken. I happily tried the eggplant casserole and was hooked! I picked up a lot recipes from them and one of my favorites is this very recipe. It is simple and easy to make and you will fall in love with it!
