I am one of those mom’s that is guilty of sticking with the same few dishes that I know how to make. I learned how to cook from my mom, and that’s what she did. We survived, so I didn’t think it was such a big deal. Until one day, I could see the disappointment at the table when I served up the same tacos for the fourth time in the month. Granted, my family really does love my tacos, they were just looking for something else. Mother’s instinct told me that.
So that evening, I started digging around to see what I could come up with. The internet was full of great ideas, but one that really stuck out were these taco stuffed shells from Spend with Pennies.
They looked not only delicious, but also fairly simple to make. I thought it would fall inside the realm of my capabilities so I gave it a shot the following week. They were really easy, affordable, and extremely tasty!
The best thing was seeing the satisfaction on those previously disappointed eyes at the dinner table that night. Victory for mom!
