When my mother made beef enchiladas at our house for the first time when I was about ten years old, that was it. I was in love. I swear I could have eaten those things every day. That’s really when I first took an interest in cooking at all. I had to see how these amazing little pieces of heaven were created. They were actually pretty simple. Mom always had me hold the tortilla shells while she filled them up. That was my job.
It was okay though, because that’s how I learned to cook really. So, when I saw this recipe for an enchilada dip on Spend with Pennies not long ago, I fell in love all over again. I love a good dip too. Basically it’s my two favorite things rolled into one.
You can’t go wrong there. I made this up right away because I already had most of the ingredients on hand. It went together easily and it was a huge hit at my table. The whole family really enjoyed it. Now I can have beef enchiladas twice a week without any complaints. Tee hee!
