Whenever we had to go to Grandma’s house for the night, she always made up the best foods for us. There were four of us in my family, besides our parents, but they never came. They would send us when they had to work or had to go to a wedding or something. Grandma struggled at first finding something that was simple for her but tasty to us. That was, until she made her ham and potato casserole. We all gobbled it right up without saying anything.
She just shook her head wondering why she hadn’t made it sooner. She knew that casseroles weren’t our favorite things, but it’s what she was good at. Her ham and potatoes were a lot like this recipe from Spend with Pennies. Of course, hers tasted better because they were made in her kitchen. Everything that came from Grandma’s kitchen was always better.
Now, I use this recipe to make the same dish for my kids. Usually I have a hard time getting them to eat meat, but they don’t mind ham and this is a nice way to sneak in some extra vegetables. It’s an all-in-one meal for sure!
