It was a Thursday night, and this momma was exhausted. It had been one of the craziest weeks that I had gone through in a very long time. The last thing that I wanted to do involved cooking. I contemplated for quite some time about just ordering out, but with the weekend coming, I wanted to save that option. I started thinking about what I could with the chicken in the sink that was thawing out. I recalled a four-ingredient recipe that I had seen on Spend with Pennies.
I knew I had everything I needed to make it, and I think I had just enough energy left in me to whip it together. Come to find out, I did. My kids and husband looked pretty grateful when I finally got up off the couch and headed towards the kitchen.
It was effortless to toss this into the oven and watch it bake. I felt a sense of accomplishment plating out something homemade instead of cheating and going the fast food route too. I have this recipe memorized now for those days when I just don’t think I’m going to be able to make it another step.
