It’s no secret that I love to make any Mexican dish. Sometimes I do not have the time to put into cooking one of my favorite Mexican dishes. This recipe is super easy and absolutely yummy! I love anything that you can throw together in the crock pot and forget about it! We all have busy lives so every extra minute I can get, I will take! Plus, it’s easy to make and tastes so good!
These types of meals are heaven sent during the week. Between working and running my kids around to their different activities and school, I don’t have very much time to spare for cooking some nights. This recipe always makes a ton, which is another plus! Leftover for the next day. Who doesn’t love leftovers?
Sometimes I will even freeze a few pieces and it tastes just as good after heating up. My kids love being able to pull some of these meals out o the freezer on the weekends when I might running on of the other kids around. They fill their bellies and still get a home cooked meal and not a TV dinner!
