The last luncheon that we had at our church was the biggest one of the year I think. It was the Saturday before the Easter service so we also did a nice Easter egg hunt for the kids. That really brought in a crowd. There were a lot of familiar faces, and a lot that we hadn’t seen before. It’s always nice to see new people coming to celebrate the Lord with us. Part of the luncheon included a catered meal from our local supermarket. They always come up with the best foods.
There was something new on the buffet line this time though, chicken piccata meatballs. I had never heard of them before and quite honestly I thought they were cream of mushroom meatballs when I put them on my plate.
That was, until I bit into one. It was just like heaven. I couldn’t believe how amazing the flavor was. Wowzer! When I got home that day, I jumped right on my computer to see if I could find a recipe. Sure enough, there was one available on Spend With Pennies.
I printed it out and headed right up to the grocery store. I made them for dinner that very next day to celebrate the Easter holiday with the family. They were a huge hit!
