All of my kids really enjoyed these. After all, who doesn’t love a taco? Putting it in the bowl involves a lot less mess, and the rice really fills you up. I think my children’s favorite part was being able to dress up their individual bowls to their personal tastes. Everyone got to eat exactly what they wanted, so there was no room for anyone to complain. I like mine with a little bit of everything so I have to use a bigger bowl.. yummy! Ingredients
1 cup microwaveable rice (I used Minute Ready to Serve Brown Rice)
¼ cup cooked, shredded chicken breast (or substitute with drained, rinsed beans for a vegetarian option)
¼ cup Chi-Chi’s salsa
¼ cup grated Sargento cheddar cheese
Optional additional toppings (if time permits!): sliced black olives, sliced green onion, pinto beans, guacamole
Instructions
Microwave rice cup according to package instructions. Place rice in a serving bowl.Stir in chicken and salsa. Top with cheese. Microwave for approximately 30 more seconds to warm entire dish, if desired.
Top with any additional ingredients of choice!
