Most days of the week, I would say about 90% of the time, I feel as though I am the busiest person on the planet. I work a full-time job and I’m a full-time mom to three very active kids. Oh, and then there’s my husband that I have to take care of, too. And all the wives out there know that it’s like a whole different full-time job if you’re married. So, basically, it’s like I work 24 hours a day. When it comes to making meals that satisfy my family and don’t require me to spend the few free moments I have in the kitchen, they are few and far between to say the least.
When I stumbled upon this 10-minute skillet recipe on The Seasoned Mom, I think I did a little dance right there in my computer chair. How perfect was this going to be? I was sure to include the few ingredients I needed on my grocery list, and made it a few days later.
It was terrific! It really did only take about ten minutes, and my husband, kids, and myself all really enjoyed it. Our favorite is stuffing this in a tortilla shell and topping with a little cheese and sour cream.
I always try to make it a little different every time though so we don’t get bored. I want this recipe to stick around for a very long time!
