Aunt Maggie always had the best parties. Most of the time, that’s where we would go for holidays and other special events. She had a huge house, a great big yard, and tons of room for everyone. She loved to host people too, so it worked out to have the family over there all the time. The days that I loved the most though, where the days that I got to go over to her house by myself. We always had such a blast. Getting her individual attention wasn’t an easy task, so when it happened, I took advantage.
One of my most favorite things to do with her was cook. She was always working on new recipes in the kitchens so that she had something to serve at the next party. The time she made these spinach, bacon, au gratin potatoes, I fell in love.
They were similar to this recipe from All Recipes. I wasn’t sure I was going to like them, because of the spinach of course, but they were really super creamy and tasty. I make these now and take them when we have parties and Maggie’s.
I want to save her from doing all the work. And I learned from the best!
