When we went to my Aunt Jenny’s house a few months ago, it was the dead of winter, super cold, and it took us two extra hours to get there because of all the snow. I love my Aunt Jenny, but that was one of the worst trips that I had ever been on in my life. Next time, I think we are just going to fly. It might be a little more costly, but at least I know that we will get there in one piece!
So, when we finally walked in her front door, everyone was starving. We had arrived in town much later than what we had expected so there wasn’t a restaurant open for miles.
Thankfully, good ol’ Aunt Jenny was there to rescue us. She had a nice pan of hot soup going on the stove and it smelled phenomenal. She said, “I hope you guys didn’t eat, I have something you’re going to love!”
It was a creamy nacho soup that she had found on The Recipe Rebel that she wanted to try out on us. It was just what we needed after that hellacious trip. It was warm, comforting, and super filling. I made sure to get that recipe written down for me before we left!
