I went over to my friend Maria’s house at the end of the summer last year to help her get the rest of her vegetables out of her garden. She said she had way more than what she was ever going to use and if I wanted to come and help, I could take some home with me. Well hot dog! There’s no way that I’m going to be turning down free food…especially fresh garden vegetables! Yummy!
So, when I got all my treasures home, I sat there and looked at them just wondering what I was going to do with the now overabundance I had myself. That’s when I recalled a chicken stew that was loaded with vegetables that I had made before.
It was similar to this recipe from The Recipe Rebel, and absolutely fantastic! I made it up that next day and everyone in my family gobbled it right up. I think the fresh veggies really gave it that something extra, but I’ve made it with store-bought and it’s still pretty darn good!
