If there is one vegetable that I can be sure to feed my family, and they’ll actually eat, it’s mashed potatoes. I’m not sure if you can really count that as a vegetable I guess…but potatoes are either way. We have mashed potatoes at just about every meal at our house. My husband loves them too. I like them, I’m not crazy about them like they are though. That was until I found this recipe on The Recipe Rebel for a way to use up the leftovers.
We didn’t always have much to speak of when it came to potatoes. Now that the family knows that they have the opportunity to eat these though, they will purposely leave some behind.
The flavor in these is absolutely incredible. I mean, who doesn’t like cheese stuffed everything? I have made these several different ways and they are always a huge hit.
I have also made these to entertain with, and adults and kids alike love them. It’s a recipe I keep pretty close to the front of my book these days.
