Uncle Pete has always been quite the character. It seems like he is always doing something fun and interesting. I love taking my kids over there because he can entertain and educate them with real life experiences. He lives out in the middle of the woods with a pond, lots of animals, fun recreational equipment, and all kinds of other things to do. The last time I took my kids out there, he asked if he could keep them overnight.
He had a solar system project he was working on and he wanted them to be able to enjoy the starry skies with him. I didn’t want to show up empty handed, so I decided to make this BBQ chili cheese biscuit casserole that I had seen on The Recipe Rebel for them.
It was really easy to put together, and it looked amazing when it was done. When I showed up with it, he was really excited. He doesn’t get home cooked foods too often. I was happy to do it for him. When I came back and picked the kids up the following day, he couldn’t thank me enough for making it. “Anytime Uncle Pete!”
