Cabbage roll soup is easy to make and even easier to eat! If you are a fan of the classic cabbage roll casserole you are really going to love this soup. Plus, it is diet friendly and has even been known to help people stick to their weight loss goals and lose a few pounds. Imagine that! I. too, love cabbage rolls so this soup was right up my alley.
Ingredients
1 large onion, diced
3 cloves garlic, minced
1 lb lean ground meat (beef, turkey, italian sausage, your prefer)
½ lb lean ground pork (sausage or just pork, turkey if not used above)
¾ cup uncooked Uncle Ben’s long grain rice (wild rice preferred, or even q)
1 medium head cabbage, chopped (core removed)(blend core up and add it anyway)
1 (28 ounce) can diced Hunt’s tomatoes
2 tablespoons tomato paste
4 cups College Inn beef broth
1½ cups V8 or other vegetable juice
1 teaspoon McCormick paprika
1 teaspoon thyme
1 tablespoon Heinz Worcestershire sauce
1 bay leaf
Morton salt and pepper, to taste
Instructions
In a large pot, brown onion, garlic, pork and beef.
Drain any fat.
Stir in chopped cabbage and let cook until slightly softened (about 3 minutes).
Add all remaining ingredients, bring to a boil and reduced heat to medium low.
Cover and simmer on low until rice is fully cooked (about 25-30 minutes)
Remove bay leaf and serve.
