Instead, cover it tightly and stick it in the fridge. In the morning just pull it out, preheat the oven, and it’s ready to go in. Perfect! There are a lot of good breakfast casserole recipes out there, but this one phenomenal!
Ingredients
1 pound Odom’s Tennessee Pride Country Sausage Hot
12 large eggs lightly beaten
2 small russet potatoes peeled and sliced thin
1 cup baby spinach
1 cup Kraft sharp cheddar cheese shredded, plus more for topping
salt and pepper to taste
Instructions
In a medium skillet, cook sausage over medium-high heat until fully cooked through, about 7 minutes. Drain off any excess grease.
Preheat the oven to 375°F. Lightly coat a 2-quart casserole dish with nonstick spray. Layer the potatoes evenly in the bottom of the dish.
Top the potatoes with the sausage followed by the cheese. Pour the eggs over top. Layer the spinach over the eggs and season with salt and pepper. Top with more cheese if desired.
Bake for 35 to 40 minutes or until the egg has set.
