Cooking for a crowd was something that my mom was amazing at. She had to be. Growing up, she was the oldest child out of eight. That’s right, she had seven brothers and sister, plus her parents. She was often put in charge of the kitchen. Her dad worked, her mom was busy taking care of everything else around the house. She says that she never minded doing it.
I think at times it had to have been overwhelming for a kid to do all that work, but she did it without complaint. It’s a good thing, because her and my dad had six kids…so she was still cooking for eight!
She pulled me into the kitchen at a young age, because like her, I was the oldest. One dish that she taught me right away was the baked beef rigatoni. It was a recipe just like this one from Group Recipes.
It really was quite simple to toss together, and it made up a huge pan to feed our whole family. It was one of my favorite meals too. It was just so gooey and delicious with all that melty cheese on top. Yum!
