I don’t know about you, but I love to put a twist on a classic. Sometimes I like to spice up one of my favorite dishes with a new flavor, but not this time! This time I am switching up a loaf to a cute, delicious muffin! These savory meatloaf muffins are easy to make and fun to eat. I started getting creative with the food I make so that my toddler would eat more.
We all know how picky kids can be. Meatloaf was not his favorite dinner. One day as I was planning dinner for the family, I had all the fixings for a delicious meatloaf and started to think about how I could change it up.
And just like that, it hit me! Change up the shape. Same fantastic, classic meatloaf recipe, but in a more compact little muffin. Not only did my toddler gobble it up, but the rest of my family thought it was a fun idea too!
