If you’d like to change it up a little bit every time you make this salsa, there are many ways to do that. Grill the pineapple for a special flavor, squeeze in some lime juice, use different kinds of onions, add some chopped mangoes… It’s up to you!

Ingredients
1/2 brown onion, chopped (or red, or sweet)
1/4 pineapple, chopped
1 red or orange bell pepper, chopped
1 jalapeno, seeded and minced (add more if you like spicy)
1/4-1/3 cup of cilantro, chopped (or use parsley instead)
Salt and pepper, to taste
Instructions:
Combine all ingredients, mix, and let sit for an hour or two before serving. For extra flavor you can grill the pineapple before mixing it with the other ingredients.
