My parents were coming to visit me and my family all the way from Florida. I couldn’t have been more excited for the week they were going to be spending with us. Since they moved after their retirement, we just don’t get to see them as much as we would like to. They come around enough, and we get to go to see them in the Sunshine state, but it’s not like it was when they lived in the same town. I knew while they were in town, I was going to want to have all of their attention and so were my kids. The idea of just locking us all in the house for a week actually didn’t sound too bad.
I knew of course we couldn’t do that, but I did want to avoid having to go out to eat all the time. Sometimes it’s easier with so many people, but when I saw this recipe on Group Recipes, I knew it would be perfect for their visit. It looked so creamy and delicious. There was bacon and mushrooms…yum!
The instructions appeared fairly easy, and I knew it wouldn’t be hard to get the ingredients together. I made this on one of the weeknights, and my mom helped in the kitchen. The meal was wonderful…and the company was fantastic. I can see this becoming a regular menu item at our place!
