Ever since I was a little girl, there’s been one meal my mom could always make to help me feel better. It’s probably not what you think either. It’s not a soup, stew, or casserole…it’s roast. There’s something about a roast with mashed potatoes and corn that always makes me feel good. The smell, the taste, all of it…just so wonderful. Nobody has ever made a roast the way that she did, and I didn’t think anyone knew how, until I found this recipe on Group Recipes.
All these flavor combinations are exactly what she used to do when I was growing up there. She still does it in fact, and she uses the fact that she is making it to try and bribe me to come over.
I’m not ashamed to say, it usually works. Even though I have the recipe now and I can make this myself at home, there’s nothing like the way that she does it. There’s also nothing like the warmth and comfort of going back home. Now, I just get to go with my own kids and husband, and they can see why I loved my youth so much.
