Spinach rice casserole is one of the main reasons I fell in love with casserole dishes. Back when I was a child, my Mom loved experimenting with casseroles. We usually had a lot of leftovers for dinners. In our hometown, it’s common to invite neighbors to eat dinner with the family all the time. Because of this, Mom had always prepared more food than usual. Sometimes, there was more than enough to feed an entire town so we always had those leftovers which we could eat for days.
Sometimes, Mom made them into entirely new dishes. For example, leftover roast pork was always transformed into some sort of stir-fry. Leftover ham was always turned into a sandwich or some ham dip.
But one of my favorite leftover transformations is a casserole. As a self-confessed cheese lover, I will eat anything with cheese on it. Most casseroles are cheese haven for me and I am always happier whenever casserole was on the menu.
Now that I have my own family, it hasn’t changed much. My husband is fond of the same food that I am fond of. It also seems as if our kids are acquiring the habit their parents had for years like our tendency to put cheese in everything.
I am about to share with you a casserole recipe that reminded me of my childhood. This one is a homey casserole recipe- rich and cheesy with a touch of “healthy” on it. Spinach rice casserole is going to be the star of your table, that I am sure.

Quick Tip: If you are not too fond of spinach, you can substitute other vegetables for it like asparagus or kale.
