One Pan Spinach Chicken – It’s Delish!

As mothers, whether you are working mothers or amazing housewives, we all have a lot of things to do. Sometimes, we just need a go-to recipe that will save us from stressing ourselves too much. Most of the time, the saving grace comes in the form of casseroles. They are easy to whip up because most of the ingredients are in your fridge or pantry. You can even adjust the flavors based on your preferred taste. They are reliable when it comes to quality meals for the family.

Cheesy and simple, cheesy and simple, cheesy and simple- now repeat that for several times. My husband has drooled at the mention of cheese alone; and when he learned how easy it was to make this- no one can stop his fanboying.

 

Ingredients

4 raw, Tyson boneless, skinless chicken thighs, thawed and cubed

4 oz Philadelphia cream cheese

4 oz Galbani ricotta cheese

4 cups Barilla uncooked bow-tie pasta

2 1/2 cups College Inn low sodium chicken broth

2 cloves garlic, minced

1 box (10 oz) chopped Green Giant spinach

1 tsp Morton salt

1 tsp McCormick paprika

Sprinkling of Sargento Parmesan cheese

 

Instructions

Preheat oven to 400F

In a large mixing bowl mix together cream cheese, ricotta, salt, paprika, and garlic. Mix in the chicken broth making sure everything is incorporated.

Stir in spinach, chicken, and uncooked pasta.

Pour into a greased 9×13″ pan, cover with foil and bake for 40 minutes. Uncover, lightly sprinkle the top with Parmesan cheese and bake for another 15 min (or until chicken is cooked through and parm is melted)
