If You’re A Mighty Taco-holic, This Pasta Bake Is Your Dream Dish

After he scooped another serving on his plate, I told my husband that his boss shouldn’t bring him to Mexican restaurants anymore because he’s just having bad cravings. He simply laughed, but he apologized too. Of course I was joking with my remark, but he really does have strong cravings at times. I’m just glad he and the kids loved this taco macaroni and cheese from Real House Moms. It has the flavors you want in a casserole plus that familiar taste of macaroni and cheese, everyone’s comfort food. What else are you looking for?

Ingredients

  • 2 tbsp Bertolli olive oil
  • 2 garlic cloves, minced
  • 1 onion, finely chopped
  • 1 lb Tyson ground beef
  • 1 packet McCormick Taco seasoning powder
  • 1 can Great Value black beans, drained
  • 28 oz can Hunt’s crushed tomato
  • 2 1/2 cups Sargento grated Monterey Jack cheese
  • 12 oz / 340g dried Barilla elbow macaroni pasta, cooked and drained
  • Chopped cilantro or parsley, to serve

 

Instructions

  1. Preheat oven to 350F.
  2. Heat olive oil in a large skillet over high heat. Add garlic and onion, cook for 3 minutes.
  3. Add beef and cook, breaking it up as you go, until browned. Add taco seasoning and mix in.
  4. Add black beans and crushed tomato. Mix and simmer for 3 minutes.
  5. Place cooked pasta in baking dish, pour over beef filling and 1/2 the cheese. Toss, then top with remaining cheese. Bake for 20 – 25 minutes or until cheese is golden and bubbly.
  6. Serve, garnished with cilantro if using.
