While we were there, Mama taught me a few more recipes which I can cook for my family. I was amused when she showed me battered notebooks and put them on the table. She told me that each notebook contained the favorites of her children, which she modified according to their tastes. She taught me a few casserole dishes my husband loved (I’m not even surprised his contained a lot of casseroles on it). I will always admire her for being such a dedicated mother and wife. She and my Mom are my role models.

The recipes are super similar but I added ham to get some protein in there and make it fun for Easter. This would also be a great dish to use up some of that leftover ham you’ll have.”
You can substitute some of the ingredients with what you have on hand. This casserole is pretty flexible. You can even adjust the flavors based on how you want it.

Ingredients
- 30 oz. Great Value frozen hash browns
- 10.5 oz. can Campbell’s cream of chicken soup
- 1/2 cup Land O Lakes butter + 4 tbsps for topping, melted
- 1 cup Daisy sour cream
- 2 cups Sargento shredded cheddar cheese
- 1/4 cup sliced green onions
- 3 cups Hormel ham, chopped
- 1 sleeve butter crackers like Ritz
Instructions
- Preheat oven to 350 degrees
- In a large bowl, add stick of butter, sour cream, and cream of chicken soup
- Microwave and melt completely
- In a 9×13 pan, add hash browns, cheddar cheese, green onions, ham and the melted butter/sour cream/cream of chicken mixture
- Mix well and coat all of the hash browns
- Bake, uncovered, for 55-60 minutes
- in a medium mixing bowl crush the crackers and mix with 4 tbsp melted butter
- top hash browns with the butter cracker mixture
- Bake for an additional 5-10 minutes
