It’s still the perfect season for rich and hearty soups. I can still make soup as much as I want to without anyone complaining that it’s too hot for them to handle. Who could blame my family- I make soup even during summer. But I am still staying true to what I believe- soup is made to eat all year round. Even my husband thinks that way because he always loves coming home to a warm meal regardless of season. A warm meal takes away his tiredness from work and just helps him relax at home.
My sons love soups too, most especially those cheesy soups that they love pairing with bread. Soon, these two will eat like their Dad- they love rich food a lot. They are also starting to have a huge appetite, which excites and worries me at the same time.
This slow cooker cauliflower soup that I am about to share with you is a mix of heavy and light. It’s thick enough to become a heavy meal, but it’s also light enough to become a side dish. Depending on where you pair it with, it can be either.
The taste of this soup will make you think that not all healthy food tastes bland. Yes, this is a healthy version and yet it doesn’t taste that way. that makes you feel better, doesn’t it?
