They Don’t Call This “Spring Casserole” For Nothing

Onions aren’t really my most favorite things in the world too. I appreciate that they make dishes taste and smell incredible just like the partner, garlic. However, they’re not what you call comfort food. You have to have at least a bit of courage to appreciate such a flavorful ingredient that will turn your tongue around with its strong flavor. However, this spring recipe tastes like comfort food. The natural sweetness of onions are enough to overpower its strong taste. You will only enjoy this recipe without any doubt.

How sweet it is to be loved by you- probably, I will be singing that next time. But for now, I hope you enjoy this family recipe that you don’t want anyone to miss.

 

Ingredients

  • 6 to 7 cups chopped sweet onions (4 large onions)
  • 1/4 cup (1/2 stick) Land O Lakes butter
  • 5 cups salted water
  • 1 cup Greta Value uncooked rice
  • 1 cup grated Sargento Swiss cheese
  • 3/4 cup Borden half-and-half

 

Instructions

Preheat oven to 300 degrees F. In a large skillet over medium heat, saute onions in butter until soft and light golden. Place in a large bowl and set aside.

Meanwhile, bring water to a boil in a large saucepan; add rice and cook 5 minutes, then drain. Add rice to onions and mix well. Mix in cheese and half-and-half.

Pour into a greased 2-quart casserole dish and bake, covered, for 1 hour
