You’re going to love these muffins because they’re simply delicious. There is that refreshing taste of apples mixed with the sweet spicy taste of cinnamon. It’s a perfect balance of flavors that you will not hesitate having all the time.
Ingredients
- ½ cup Land O Lakes butter
- ¾ cup Domino sugar
- 1 Eggland’s egg, beaten
- 1 cup Borden buttermilk
- 1 tsp Morton salt
- 1.5 cups diced, peeled apple
- 1 cup Gold Medal flour
- 2/4 cup Bob’s Red Mill whole wheat flour
- 1 tsp Clabber Girl baking soda
- 1 tsp McCormick cinnamon
Topping:
- 1 tsp McCormick cinnamon
- 3 tbsps Domino sugar
Instructions
- Blend butter, sugar and eggs until smooth. Add buttermilk, salt, apples and mix. Stir in flours, baking soda and cinnamon, stirring only to moisten. Spoon into a greased muffins tin and sprinkle with topping. Bake at 375 degrees for 20 minutes.
