How does your family like their fried chicken? Well, I am sure that most of you will answer- “we like them crispy and juicy”, which would have been my answer too… until I got to eat in that Korean fast food that just opened in town. It has its own version of fried chicken except there is a twist. While the skin is still crispy, it has that tender quality because it’s dipped in a glaze. The sweet glaze manages to soften the skin, making it less crispy; but at the same time you will not be put off by it.
My husband and I took home a bucket for dinner that day. Our children, who was being looked after by Liz, ran towards us to welcome the chicken instead of the parents. I couldn’t blame them-they smelled so great.
I whipped up a simple mashed potatoes to go with the dinner, plus a few roasted asparagus. They go so well with the fried chicken. It’s safe to say that there was nothing left that day but bones.
I decided to imitate the recipe by making my own version of it using the recipe from The Kitchn (roasted instead of fried). However, instead of the drumstick, I made it using chicken thighs. My family loves chicken thighs and they’re now addicted to this recipe.
