This Dessert Is Fit For A King!
I always have a hard time adjusting to the change in seasons. I usually get sick in between, most especially if it’s between a cold month and then a hot month. The days transitioning summer to fall are usually the times when I don’t feel well. Also, there’s winter and spring. However, at least spring is not as hot as summer, and I still get to adjust quite well. I am just happy that my sons and my husband are not as sensitive to the change as I am.
However, there is one crossover between seasons that I will not mind- food. I know you can relate with me there; we’re all addicted to food different ways. I am sure you already have an idea about what I am talking about.
Pumpkins are considered as Fall food. Most of my Fall recipes revolve around pumpkin as an ingredient. However, since pumpkin is my family’s favorite, we cook it all year long and actually most of the time.
Our most favorite pumpkin recipes involve soups and desserts. Pumpkin has that texture that we love on soups- it just melts in the mouth. And they really taste great in desserts; pumpkin desserts are classics for us.
Which brings me to this pumpkin roll recipe from Valerie’s Kitchen. Moist, dense, and sweet, this recipe is going to become an instant family favorite regardless of seasons.

Quick Tip: Add a little fresh lemon juice when you make the cream cheese icing. It helps cut the sweetness and adds a nice balance to the flavor.
