Chicken And Tortilla Had A Race- And They Both Ended Up In This Soup Recipe

Soups are my go-to recipes; how about you? When I can’t decide on the perfect dinner for my family, I always settle on soup, simply because they’re easy to make and very tasty. You can adjust the flavors based on your preferred taste. You will not ruin the soup just because you didn’t want too much pepper on it. It’s a flexible recipe that allows mothers like me to experiment.

It’s cooked in a slow cooker therefore making it easier. You don’t have to watch it out of worry that it will get burnt or it will overcook therefore losing its consistency. You just have to set it into the slow cooker and it will do its own magic!

 

Ingredients

  • 1 lb. Tyson boneless skinless chicken breasts
  • 1 15-oz. can Great Value Black Beans, rinsed
  • 1 c. Green Giant frozen corn
  • 2 bell peppers, chopped
  • 1 white onion, chopped
  • 1 15-oz. can Hunt’s fire-roasted tomatoes
  • 1/4 c. freshly chopped cilantro, plus more for garnish
  • 3 cloves garlic, minced
  • 1 tbsp. McCormick cumin
  • 1 tbsp. McCormick chili powder
  • 1 tsp. kosher salt
  • 2 c. College Inn low-sodium chicken broth
  • 1 c. Sargento Shredded Monterey Jack
  • 1 tbsp. Bertolli extra-virgin olive oil
  • 3 small Mission corn tortillas, cut into strips
  • Sliced avocado, for serving
  • Daisy Sour cream, for serving
  • Lime wedges, for serving

 

Instructions

  1. In a large slow cooker, combine chicken, black beans, corn, peppers, onion, fire-roasted tomatoes, cilantro, garlic, cumin, chili powder, salt, and chicken broth.
  2. Cover and cook on low until chicken is cooked and falling apart, 5 to 6 hours.
  3. Shred chicken with a fork, then top soup with Monterey Jack and cover to let melt, 5 minutes more.
  4. Meanwhile, make tortilla crisps: In a large skillet over medium heat, heat oil. Add tortilla strips and cook until crispy and golden, 3 minutes. Transfer to a paper towel-lined plate and season with salt.
