It’s still cold, isn’t it? My husband is complaining about the thermostat yesterday, saying that it might be broken. It’s not actually; it’s just that yesterday is a bit colder than usual even though we thought it should be warmer than most days. The weather is probably still this unpredictable because it’s changing seasons. However, our plans for food changed because of this unpredictability.
We were supposed to have roasted chicken yesterday because we missed having one for supper. I was planning on herb roasted chicken along with a side dish of mashed potatoes and gravy. But since the weather called for soup, it was soup that was on the menu for supper.
We had no regrets about it though. Soup really is comfort food. You can eat it anytime you want to because it’s one of those recipes that could be served whenever and however you like it.
Last night, we had chicken tortilla soup for supper. I had to adjust the flavors a bit, but we pretty much enjoyed eating it. It warms not only the body, but also the heart and the soul.
I paired it off with homemade supper rolls. Everyone was just too happy eating that we almost finished the entire crockpot.
