Cakes defined most of my childhood, at least when it came to desserts. Back then, desserts weren’t as diverse as the desserts now. Most of the time, dessert was either a cookie, a slice of fruit pie, or a slice of cake. You would be considered lucky if you Mom packed a slice of cheery pie along with your lunch. I had a lot of favorite homemade cakes, and one of them was the hummingbird cake.
I have eaten a lot of this cake from childhood up to now, but I never cared about its history until now. I just learned that it was named after a national bird. While the cake’s name itself could have been a giveaway, there could have still been another reason for it.
This cake is my sons’ favorites. I often used my Mom’s recipe including the cream cheese frosting because they taste really good together. However, sometimes I made this with buttercream frosting and it still tasted as good.
I found another hummingbird recipe that reminds me of my Mom’s version. It has a little bit of a tweak on the ingredients, but it’s almost the same. The cake is so moist and soft and fluffy; and the cream cheese frosting was creamy and with just the right amount of sweetness.
