This Chicken Dances To The Tune Of Black Bean Salsa!

This recipe from The Well Fed Newly Weds is a winner even for my relatives. I made this for them when my family and I visited one of my aunts. They thought the combination of flavors was just right. No ingredient overpowers another ingredient. It’s a perfect dish that could be eaten by anyone, including the kids. Most of them asked for the recipe so they could make it for their own families.

One of the easiest dinner ever! All you have to do is put them together in the slow cooker and it will do its magic on its own! Pretty amazing!

 

Ingredients

1 lb. Tyson boneless skinless chicken breasts
1 cup College Inn low-sodium chicken broth
1 cup Pace salsa
15 oz. can Great Value black beans, rinsed and drained
15 oz. can Green Giant corn, drained
1 packet Trader Joe’s taco seasoning mix
1 cup Sargento shredded cheddar or Mexican blend cheese
1/2 cup Daisy sour cream

 

Instructions

Grease a slow cooker with non-stick spray and place the chicken inside.

Add the chicken broth, salsa, black beans, corn, and taco seasoning mix.

Cover and cook for 6 to 8 hours on low or 3 to 4 hours on high.  (The chicken should be falling apart tender.)

Remove the chicken and place it on a plate or cutting board. Use two forks to shred the chicken. (Give it a taste – it will be juicy and delicious!)

Add the cheese and sour cream to the sauce remaining in the slow cooker and stir until melted.

Return the chicken to the pot and stir to combine. (You can also serve the sauce with the shredded chicken on top.)
