We all know about the saying, “there is always room for dessert” and I couldn’t agree more. Even if we are full, we still eat that piece of sweet treat that is usually served after a heavy and rich meal. It’s difficult to say no to a sinful dessert that always makes everyone feel better. In my family, the dessert always comes in the form of cookies; at least during the weekdays. Weekdays are extremely busy for me. So I usually make a batch of cookies on Sundays and they last for a week if sealed properly.
Sometimes, if there’s an easy dessert that I could make in an hour or less, I usually serve it to the family during dinner. Desserts for dinner meant longer conversations with my husband and even my kids. And for a mother and a wife, that’s considered the best time of the day.
I made this mascarpone mousse a few nights ago during a weekend. It took a bit of my time and my effort, but it’s all worth it in the end. The smiles on my husband’s and on my kids’ faces were confirmation enough for me.
I placed fresh berries on top just to add a little color and flavor. But this will taste good with nuts and chocolate shavings on top too, if you prefer it richer. You can find a copy of this recipe on the next page.
