I have always loved indulging on this chicken and stuffing casserole recipe that my Aunt Christine always makes. Aunt Christine is one of my paternal aunts. We rarely see her because she lives on the other side of the country. It will take us hours to drive there. The easiest is through plane, but work doesn’t always permit us to go on vacation.
Whenever we have the chance though, Aunt Christine makes sure she spoils us by cooking us really good food. One of my favorite recipes of her is her chicken and stuffing casserole. I know a lot of people who makes this dish so I have tasted a lot of different versions, but Aunt Christine’s stands out.
Aunt Christine’s chicken and stuffing casserole tastes like home. I often tell you that the older generation in our family does not believe in pre-made ingredients. They all make everything from scratch, which is why most of their dishes can only last for one or two days. The rawness of the ingredients make them easier to get spoiled. However, because of the same reason, their versions are always more flavorful and more delicious. If you come to one of our reunions, you can see that Aunt Christine’s chicken and stuffing casserole is one of those that gets finished first. Everyone truly couldn’t resist. And she is mighty proud of that!
