When I shared this recipe to my cousin Joanna, she immediately served this for dinner. She said that my nephew has been eating a lot of junk food lately, and she was looking for easy recipes that would get him to eat vegetables. She was successful with a few, and unsuccessful with the others. With this pea soup, she was successful. My nephew asked for another bowl of this!

My husband loves eating this as his “snack” whenever he feels hungry at night. He eats this cold and he loves it! He doesn’t even need bread. He just gulps down the soup with that smile on his face. Yes, this is addicting!
Ingredients
16 ounces Green Giant Frozen Peas – thawed
1/2 Cup Fresh Lemon Juice (2-3 lemons)*
Leaves from 1 Sprig of Fresh Thyme
1 Tablespoon Domino Sugar
1/2 teaspoon Sea Salt
1/4 teaspoon McCormick Ground Pepper
2 Tablespoons Bertolli Olive Oil
1/2 Cup Water (add more for a thinner soup)
Alouette Crème Fraîche
Flaked Sea Salt
Fresh Thyme
Instructions
Process all soup ingredients in blender until smooth. (Using Vitamix – process on variable 7 until smooth then process on high for 30 seconds.)
Serve cold or transfer to pot over medium/low until hot.
Serve with salt, fresh thyme and crème fraîche.

Quick Tip: if you prefer a little less tangy soup, decrease the amount of lemon.
