This turkey and rice casserole recipe is the best thing I have ever learned from one of my friends who came over to dinner a few nights ago. I always have a problem with leftovers. The thing is, in my desire and haste to make the best food or my family, I always tend to overestimate and end up preparing more food that we can eat. My sons cannot eat a lot yet for now. And while my husband can eat for two, there are still more leftovers after every special occasion. Most of the time, I turn them into sandwiches or salads, most especially if the leftovers are meat. However, one can only eat so much sandwich so there are times when I really want to find a new recipe that I can prepare which is made of those leftovers.
This turkey and rice casserole recipe is suggested to me by my friend, Trish. Being one of my closest friends, she already earned the liberty of acting like my home was hers. So it’s a common sight for her to rummage through my fridge. She found a lot of leftover turkey in there (my husband craved for turkey a few nights ago) and asked me what I would do with it. She probably saw the desperate look on my face and taught me this casserole recipe. I know a few turkey casserole recipes too, but this one is something new and something heavier than most. It’s a winner though because my family loved it! My husband even joked that he would buy turkey again just for this. Can you imagine that?
